fluorescent lighting performs nicely and are not hot….the tubing creates a nice even light across the counter for operating and not person patches like some of the other folks

Rope lights! Simple to install, never get too hot, and really even lighting.
Also, I advocate that you get a little remote control for them to keep within the cabinet to turn on and off. (My husband set up these above top cabinets to light the ceiling under cabinets to light the counter and beneath bottom cabinets to light the floor… separate remote for every single. Really nice at night or for parties or for dim lighting when firm stays overnight.)
